Theologies are a shared pool of 8 picks across all World Religions. To establish a theology you must adopt the religion as your State Religion and spend a Disciple on the founding mission. The effect then applies globally to every nation following that religion, and the slot is locked — no other player can pick it.
Hinduism is a hybrid: the pagan religion of the Empires of the Indus nations (Maurya, Yuezhi, Tamil). It never spreads to other players, but it builds the full worship chain and always adopts theologies.
